Interrupt his Spells with Aggressive Attacks

Sir Gideon has low poise, allowing him to easily be staggered by continuous heavy attacks. Even with a lighter weapon, spamming jump attacks up close as he charges spells will allow you to interrupt him. While it may be difficult to close the distance at first, when he casts Comet Azur, it will take a lot of time to charge and give players a chance to run in.

The Bloodhound's Step Art of War skill will allow you to dodge through a large majority of the spells that Sir Gideon will through out. Equip a weapon with the skill or add the Art of War to your weapon before fighting Sir Gideon to make dodging his attacks a breeze.

Take advantage of Sir Gideon's weakness to Bleed in this fight. Add Blood Grease to your weapons or use weapons that already have base Bleed damage to cause massive damage. Applying Bleed and attacking aggressively will make short work of Sir Gideon.
